BANANA NUT CAKE AS A NICE SWEET PRESENT

You will need:

  • 2 1/2 cups all-purpose flour (or whole wheat cake and pastry flour  to reduce carbs and add some fiber)

  • 1 tablespoon baking soda

  • 1 pinch salt

  • 1/2 teaspoon vanilla

  • 1/2 cup unsalted butter

  • 5 small or 3 big ripe mashed bananas

  • 1/2 cup chopped walnuts

  • 1 cup white sugar

  • 3/4 cup light brown sugar (Domino if available)

  • 2/3 cup buttermilk (or regular milk for a little less sweet)

  • 2 eggs



  • How to prepare:
    - Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 - 5 inch round pans.
    - In a large bowl, mix butter, vanilla, white sugar and brown sugar until creamy, light and fluffy. Add in eggs, mixing one at a time. Mix in the bananas.
    - In a small bowl, whisk together flour, baking soda and salt; Add this flour mixture alternately with the buttermilk to the creamed mixture.
    - Stir in chopped walnuts. Pour batter into the prepared pans.
    - Bake in the preheated oven for 30 minutes. Remove from oven, and allow to cool.

    The whole process takes about an hour. Calories per serving: 347(with all purpose flour).
